Tomato Tartines

Ingredients vary widely when it comes to these trendy, French bistro-style, open-faced sandwiches. Start with our basic recipe for snack time and, later on, try adding lean chicken, turkey, fish or more vegetables for a heartier meal.

INGREDIENTS:
  • 2 slices whole-grain bread
  • 1/4 cup low-fat ricotta cheese
  • 1 tsp olive oil
  • 8 cherry tomatoes, halved
  • 1/2 tsp fresh garlic, minced
  • 1/2 tsp thyme
  • Sea salt and fresh ground black pepper, to taste
  • 1 tbsp Parmesan cheese, shredded
INSTRUCTIONS:
  1. Toast bread slices and distribute ricotta cheese evenly over top of each.
  2. In a small skillet, heat oil and sauté tomatoes, garlic, thyme, salt and pepper, to taste, until tomatoes soften, about 5 minutes.
  3. Top bread slices with tomato mixture, sprinkle with Parmesan cheese and serve.
